Jamaica pepper or “allspice” is a dried, unripe fruit of an evergreen tropical tree, sometimes called Pimenta officinalis. It’s quite a popular spice all over the world. It gives dishes an incredible flavor and can even change the taste with some notes of spiciness, acerbity and sweetness. It has a complex aromatic bouquet with the notes of cinnamon, black pepper, nutmeg and clove. It is normally used while smoking, frying or stewing meat, paultry, fish and even mushrooms. Allspice is added while preserving food as well.
